Pear/Peach Syrup

1 29 oz. or 2 small cans of pears or peaches
1/2 teas. cinn. sugar
In blender or with a hand blender puree fruit with all juices until smooth. Add cinn. sugar. heat in a pan and serve on pancakes, waffles, or french toast. Everyone in our family prefers this to maple syrup. (It is an excellent way to rotate your food storage!)

Eclair Cake

This is a very easy recipe don't let the instructions overwhelm you!
1 c. water
1/2 c. real butter
1/8 teas. salt
1 c. flour
4 eggs
cooking spray
3 sm. pkgs. instant vanilla pudding
1 (8 oz.) pkg. cream cheese
4 c. milk
1 (12 oz. container) cool whip
Hershey's chocolate syrup
Heat oven to 400 degr. In saucepan, bring water, salt, butter to a rolling boil. Turn heat to low and stir in flour. Stir vigorously over low heat until mixture forms a ball, abt. 1 min.; remove from heat. Beat in all 4 eggs at once; continue beating until smooth. Spread evenly on lightly sprayed sheet cake pan. Bake puffed and golden, 20-30 min. Cool.
As cake cools; In deep bowl combine pudding, cream cheese, and milk. Beat slow at first and then increase speed to med. high and beat 2 min. Spread over cooled "eclair". Spread Cool Whip over pudding layer and drizzle with syrup. Chill and serve

Macaroni Salad

1 pkg. sm. salad mac., cooked and drained
4 hard boiled eggs, finely diced
1 sm can sliced black olives, drained
1 c. grated cheese
1c(+) diced sweet pickles
1 tbsp. yellow mustard
1 tbsp. Dijon mustard
1/2 teas. onion pow.
1/4 teas. celery salt
season salt & pepper to taste
2 parts Miracle Whip/1 part Mayonnaise
Combine all ingr. This is the best I could come up with on measurements! Most things are by taste, so you will need to taste it to fine tune. Garnish with 1 hard boiled egg sliced and a light sprinkle of paprika.
