Porcupine Meatballs

1 egg, beaten
1/4 c. unreconstituted tomato soup
1 tbsp. minced onion
1 tbsp. parsley
1/2 teas. salt
1/4 c. rice
dash pepper
1 lb. lean gr. beef
Mix all ingredients together thoroughly and form 20 meatballs
In skillet combine 1 can tomato soup as well as remaining can of tomato soup, 1 c. water, 1 tbsp. worch. sauce. Drop meatballs into soup mixture. Simmer until done. Approximately 40 min. to 1 hr. 4-5 servings

Best Brownies in the World

Bring to boil in saucepan:
1 c. water
1 c. butter
5 tbsp. cocoa powder (packed tight)
In large bowl, thoroughly mix together:
2 1/2 c. flour
2 c. sugar
1/2 c. sour cream
1 teas. salt
1 teas. baking soda
2 eggs
As you continue beating, slowly pour in cocoa mixture until mixture is smooth.
Bake 350 deg. 20-22 min. in greased and floured jelly roll pan. Cool and frost
Frosting: 3-4 skorr bars crushed and combined with 1 (12 oz.) cool whip.

Skorr Cake

Heat:
1/2 cup butter
1 cup water
1/2 cup oil
Add:
2 cups flour
2 cups sugar
1 tsp. soda
3/4 teas. salt
1 tsp. vanilla
Bake in greased & floured 13 x 9 pan 350 deg. 20-25 min.
While cake is hot pour over all: 1/2 can sweetened condensed milk & 3/4 cup carmel sauce.
Frost with: 3-4 Skorr bars crushed and mixed with 12oz. cool whip. (If you want to know the other name for this cake contact me personally.)

Grape-Chicken Salad


2 cups cooked chicken, cubed
1 cup slivered celery
1 tbsp. lemon juice
salt & pepper to taste
Toss together then add:
1/2 cup mayo
2 cups green grapes
Serve on lettuce leaves with sliced almonds as garnish or in croissants.

Crockpot Chicken Enchiladas

2 c. cooked chicken breasts, cubed
1 can cream of mushroom soup
1/2 can milk
1 can Rotelle Tomato & Green Chili
1 teas. minced onion
16 oz. sour cream
10-12 corn tortillas, cut into small pieces
Combine liquid ingr. and set aside. Layer 1/2 tortillas, 1/2 chicken, 1/2 sauce, repeat. Top with generous layer of colby-jack cheese. Heat on high for 2 hours.

Creamed Potatoes au Gratin

3 Medium-sized potatoes (abt. 1 lb.)
onion to taste
salt & pepper
1 c. whipping cream, heated
(may need some regular milk)
1/3 c. fresh grated parmesan cheese
2 tbsp. fine italian bread crumbs
1/4 c. melted butter
Peal and slice potatoes. Cook potatoes and onion in gently boiling water until tender, drain. Arrange potatoes and onions in shallow baking dish. sprinkle with salt & pepper. Drizzle melted butter over potatoes and onion. Then drizzle cream over mixture to barely cover the top. At this point I often need to add a bit of milk to achieve my result. Combine cheese and crumbs and sprinkle over the potatoes. Bake 350 degrees untilmost of the cream os absorbed and the top is golden. App. 30 min.

Honey Butter

1 cup real butter (softened)
3/4 cup honey
1 (7 oz.) jar marshmallow cream
Whip together butter and honey. Then add marshmallow cream, whip thoroughly. Enjoy! Store in fridge.

Huckleberry-Raspberry Dessert Cake



First Layer:
Prepare a White Pudding Cake Recipe as directed. Divide the batter in half. Pour first half into a greased 13x9 cake pan. (Use remaining batter to make cupcakes.) Or if it is a big group make 2 cakes, but be sure to double the rest of the recipe. Cool.
Second Layer:
Whip together until light and fluffy: (8 oz.) cream cheese(8 oz.) cool whip3/4 cup powdered sugarSpread on cooled cake and refrigerate 1-2 hours.
Third Layer:
Prepare 1 pkg. raspberry danish dessert according to pie filling recipe. Add 4c. raspberries and huckleberries. (Can be frozen fruit.) Let cool. Spread on cream layer. Chill for 2 hrs.
