Ski Party Chili

2 lbs. lean ground beef cooked & crumbled
1 29 oz. can tomato sauce
1 29 oz. can pinto or red beans, drained & rinsed
1 c. diced onion
1/2 c. diced green chili
1/4 c. diced celery
3 med. tomatoes, chopped
2 teas. cumin
1 1/2 teas. chili powder
1 1/2 teas. red pepper (this is the part to adjust for hotness - 1/4 teas. and up)
2 teas. pepper
2 teas. salt
2 c. water
Combine all ingr. in crock pot, cook high 2-3 hrs.

Sweet Potato Souffle

5 c. Mashed sweet potatoes
3/4 c. sugar
1/2 stick real butter
1 c. milk
1/2 teas. salt
1 tsp. vanilla
Mix well. Pour into buttered pan.
Topping:
1 c. Brown sugar
1/2 c. flour
1/3 c. butter, melted
1c. chopped pecans
Crumble topping evenly over potato mixture. Bake at 350 degr. for 35-45 min. uncovered.

Joan's Clam Dip

1 8 oz. cream cheese, softened
1 tbsp. mayo.
1 teas. lemon juice
1/2 teas. worch. sauce
1 can minced clams & part of juice
2-3 tbsp. onion juice
Combine and serve with chips.

Joan's Potato Salad

Mix together:
3 c. mayonnaise
2-3 tbsp. pickle juice
2 tbsp. ketchup
2 tbsp. mustard
1 teas. Lawry's season salt
1c. dill pickles cut in small pieces
Add:
8 potatoes, cooked, peeled, cut in small cubed
8 eggs, cooked and chopped

Hamburger Stroganoff

Brown together:
1 lb. lean ground beef
1 tbsp. minced onion
1/4 teas. garlic powder
Add:
3 tbsp. flour
1/2 teas. Lowery season salt
1 beef bullion cube
1/4 teas. pepper
1 c. milk
1c. sauted mushrooms
Heat and simmer for 10 min. Add 1 c. sour cream. Serve over, buttered noodles, rice or baked potatoes.

Terri's Granola

Stir in very large bowl:
1 42-oz. container Old Fashion Quaker Oats
1 14-oz. pkg. flaked coconut
1/2 lb. each: almonds, pecans, walnuts
Heat in microwave for 1 minute and stir:
1c. olive oil
1c. honey
2/3 c. brown or white sugar
4 teas. vanilla
Pour over oat mixture and stir well.
Spray Pam on 2 large cookie sheets. Divide mixture onto sheets.
Place 2 racks in the middle of the oven. Bake both cookie sheets together at 250 degr. for 80 min. Alternate cookie sheets after 40 min. Take out of the oven and stir , let cool. Store in airtight container or ziplock bags.
Variation: decrease sugar by 4 teas. and vanilla by 2 teas. Add 2 c. raisins or 1/2 raisins and 1/2 dried cranberries. Cook as directed.

Beef Stroganoff

2 lbs. lean round or sirloin steak, cut into thin strips or small chunks
2 tblsp. oil
1 clove garlic
1 tbsp. minced onions
1 teas. season salt
1/8 teas. white pepper
1/8 teas. black pepper
1/2 lb. fresh mushrooms, washed and sliced
1 c. water
1/4 c flour
1 c. milk
2 tblsp. paprika
16 oz. sour cream
Hot cooked rice or noodles
Heat garlic in oil in a pressure cooker, for a few min., discard garlic. Add meat to pot and brown lightly. (If you don't have a pressure cooker, you can use a crockpot, at this point, you would put the meat in the crockpot.) Add onion, water, salt & pepper. Bring to boil and pressure cook for 15 min. (Cook low-high 2-6 hrs. in crockpot.) Add mushrooms, cover and cook gently until they are tender. Blend flour & milk until there is no lumps. Slowly stir into meat mixture until it thickens. (With a crockpot, I find it works better to heat the milk mixture in a small saucepan and then stir it into the meat mixture after it has thickened.) Add, paprika and sour cream, mix and heat well, but do not over a high heat as the creams will separate. Correct seasoning to taste and serve over rice or noodles.

Fan Baked Potatoes

3/4 c. melted butter
1 teas. oregano leaves
1/2 teas. salt
1/4 teas. garlic powder
1/8 teas. pepper
(any other spice that smells good)
6 med. potatoes
Minced onion
In saucepan melt butter and add spices, set aside. Cutting not quite through, slit potatoes into 1/4 in. slices. Place each potato on a piece of tin foil, (shiny side in). Sprinkle into all the slits, minced onion to taste. Drizzle butter mixture equally over all the potatoes, be sure to get in the slits! Seal potatoes in foil. Bake 350 degr. 1 hr. can be cooked on the grill in about 40-45 min. Serve with sour cream.

Garden Supper Casserole

2 c. Pepperidge Farm bread crumbs
1/2 c. shredded cheddar cheese
2 tblsp. butter, melted
1c. cooked peas
1 tblsp. minced onion
3 tblsp. butter
3 tblsp. flour
1 teas. salt
1/2 tsp. pepper
1 1/2 c. milk
2 c. cut up, cooked chicken
2 large tomatoes
Mix bread crumbs & 2 tbsp. melted butter, spread 2/3 in greased 13x9 baking dish. Top with peas and chicken. In sauce pan cook onions until tender, blend in flour and seasonings. Pour mixture over casserole. Arrange sliced tomatoes on top. Sprinkle with remaining crumbs then cheese. Bake 350 degr. 30 min. or until bubbly.

Hot Dog Casserole

1 pkg. oscar meyer bun length beef franks, sliced "penny" style
1 can condensed milk
1 can cream of mushroom soup
1 tbsp. minced onions
2 teas. parsley
4 c. cooked, peeled & sliced potatoes
1 tbsp. flour
2 c. grated cheese
1/4 teas. season salt
1/8 teas. pepper
In saucepan stir milk, flour, until smooth. Add 1 1/2 c. cheese, cook until thicken, add spices. Fold cheese mixture, potatoes and franks, turn into 2 qt. casserole dish. Garnish with remaining cheese. Bake 325 degrees for 30-40 min. or until bubbly.

Impossible Chicken Potpie

1 pkg. onion soup mix 1/4 c. Olive oil 1/2 teas. Garlic powder 4 uncooked chicken breast halves Preheat oven to 450 degrees. Combine all ingredients in 1 gallon ziplock bad. Seal. Shake until chicken is evenly coated. Arrange evenly in ungraded baking pan. Bake uncovered 45 minutes or until juice runs clear. Turkey or Chicken Tetrazzini

8 oz. spaghetti, broken in pieces, cooked until almost tender
5 tbsp. butter
6 tbsp. flour
3 c. chicken broth
1 c. cream
1 tsp. salt
1/4 tsp. pepper
5 tbsp. green pepper
3-4 c. poultry cooked and cubed
3/4 c. parmesan cheese
1/2 c. grated cheddar
Melt butter in small pan, blend in flour, stir in chicken broth. Cook until thick. Combine all ingr. in casserole dish and garnish with cheddar cheese.
Bake 350 degr. 30 min.

Jan's Chicken

6 boneless, skinless, browned and placed in baking dish
Combine in bowl:
1 c. chopped onions
2 c. heavy cream
2 cans cr.of chicken soup
2 tblsp. Worch. sauce
4 teas. salt
1/4 teas. pepper
1/4-1/2 teas. garlic powder
Pour over chicken, cover, bake 300 degr. 2hrs. Serve over rice.

Chicken Chili

4 c. chicken breasts, cubed
1 tbsp. veg. oil
2 cans great northern beans, rinsed & drained
1 (14 oz.) can chicken broth
1 teas. salt
1 teas. cumen
1/4 teas. cayenne pepper
1 med. onion, minced
1 1/2 teas. garlic pow.
1 (4oz.) can minced gr. chili
1 teas.oregano
1/2 teas. pepper
1 c. sour cream
1/2 c. whipping cream
Cook chicken, onion, garlic in oil until chicken is no longer pink. Add everything but the creams. Bring to boil. Simmer 30 min. Remove from heat and add creams. Stir until well blended. Serve.

Curry Chicken Divan

1 pkg. frozen broccoli, thawed
4c. chicken, cooked and diced
2 cans Campbells cr. of chicken soup
1/2 c. mayo
1 1/2 tblsp. curry powder
5 tblsp. lemon juice
1/4 c. milk
grated med. cheddar cheese
Layer broccoli, then chicken in 13x9 baking dish.
Combine next 5 ingr. in bowl and mix until smooth. Pour over meat and broccoli. Top with cheese. Bake 350 degr. for 30 min.

Mom's Shepard Pie

1 lb. diet lean ground beef, cooked and crumbled.
1 can Campbells cr. of mush. soup
1/2 teas. minced onion
1/4 teas. season salt
1/8 teas. pepper
1/2 can milk
1 can french cut beans, drained
2-4 c. mashed potatoes, warmed
Medium Cheddar cheese
Combine and bring to bubbly, first 7 ingr. place in 13x9 baking dish. Top with desired amount of potatoes. Cover generously with cheddar cheese. Bake 350 degr. for 20-30 min. or bubbly and cheese in melted and golden.

Huckleberry Cheesecake

2 pkgs. graham crackers, crushed
1/2 c. butter, melted
1/2 c. sugar
1/2 teas. cinn.
Combine and press into a 13x9 baking dish reserving 1/2 to use as garnish. Refrigerate to harden.
Whip until fluffy:
1 8 oz. pkg. cream cheese, softened
1 c. powdered sugar
1 8 oz. cool whip
Spread on crust and refrigerate for 1-2 hrs.
Topping:
1 pkg. raspberry danish dessert, prepared according to pie filling directions. Cool, add 1-2 c. huckleberries and pour over cream cheese mixture and refrigerate 3-4 hrs. or overnight.
Before serving, sprinkle with reserved crust.

Pear/Peach Syrup

1 29 oz. or 2 small cans of pears or peaches
1/2 teas. cinn. sugar
In blender or with a hand blender puree fruit with all juices until smooth. Add cinn. sugar. heat in a pan and serve on pancakes, waffles, or french toast. Everyone in our family prefers this to maple syrup. (It is an excellent way to rotate your food storage!)

Eclair Cake

This is a very easy recipe don't let the instructions overwhelm you!
1 c. water
1/2 c. real butter
1/8 teas. salt
1 c. flour
4 eggs
cooking spray
3 sm. pkgs. instant vanilla pudding
1 (8 oz.) pkg. cream cheese
4 c. milk
1 (12 oz. container) cool whip
Hershey's chocolate syrup
Heat oven to 400 degr. In saucepan, bring water, salt, butter to a rolling boil. Turn heat to low and stir in flour. Stir vigorously over low heat until mixture forms a ball, abt. 1 min.; remove from heat. Beat in all 4 eggs at once; continue beating until smooth. Spread evenly on lightly sprayed sheet cake pan. Bake puffed and golden, 20-30 min. Cool.
As cake cools; In deep bowl combine pudding, cream cheese, and milk. Beat slow at first and then increase speed to med. high and beat 2 min. Spread over cooled "eclair". Spread Cool Whip over pudding layer and drizzle with syrup. Chill and serve

Macaroni Salad

1 pkg. sm. salad mac., cooked and drained
4 hard boiled eggs, finely diced
1 sm can sliced black olives, drained
1 c. grated cheese
1c(+) diced sweet pickles
1 tbsp. yellow mustard
1 tbsp. Dijon mustard
1/2 teas. onion pow.
1/4 teas. celery salt
season salt & pepper to taste
2 parts Miracle Whip/1 part Mayonnaise
Combine all ingr. This is the best I could come up with on measurements! Most things are by taste, so you will need to taste it to fine tune. Garnish with 1 hard boiled egg sliced and a light sprinkle of paprika.

Porcupine Meatballs

1 egg, beaten
1/4 c. unreconstituted tomato soup
1 tbsp. minced onion
1 tbsp. parsley
1/2 teas. salt
1/4 c. rice
dash pepper
1 lb. lean gr. beef
Mix all ingredients together thoroughly and form 20 meatballs
In skillet combine 1 can tomato soup as well as remaining can of tomato soup, 1 c. water, 1 tbsp. worch. sauce. Drop meatballs into soup mixture. Simmer until done. Approximately 40 min. to 1 hr. 4-5 servings

Best Brownies in the World

Bring to boil in saucepan:
1 c. water
1 c. butter
5 tbsp. cocoa powder (packed tight)
In large bowl, thoroughly mix together:
2 1/2 c. flour
2 c. sugar
1/2 c. sour cream
1 teas. salt
1 teas. baking soda
2 eggs
As you continue beating, slowly pour in cocoa mixture until mixture is smooth.
Bake 350 deg. 20-22 min. in greased and floured jelly roll pan. Cool and frost
Frosting: 3-4 skorr bars crushed and combined with 1 (12 oz.) cool whip.

Skorr Cake

Heat:
1/2 cup butter
1 cup water
1/2 cup oil
Add:
2 cups flour
2 cups sugar
1 tsp. soda
3/4 teas. salt
1 tsp. vanilla
Bake in greased & floured 13 x 9 pan 350 deg. 20-25 min.
While cake is hot pour over all: 1/2 can sweetened condensed milk & 3/4 cup carmel sauce.
Frost with: 3-4 Skorr bars crushed and mixed with 12oz. cool whip. (If you want to know the other name for this cake contact me personally.)

Grape-Chicken Salad


2 cups cooked chicken, cubed
1 cup slivered celery
1 tbsp. lemon juice
salt & pepper to taste
Toss together then add:
1/2 cup mayo
2 cups green grapes
Serve on lettuce leaves with sliced almonds as garnish or in croissants.

Crockpot Chicken Enchiladas

2 c. cooked chicken breasts, cubed
1 can cream of mushroom soup
1/2 can milk
1 can Rotelle Tomato & Green Chili
1 teas. minced onion
16 oz. sour cream
10-12 corn tortillas, cut into small pieces
Combine liquid ingr. and set aside. Layer 1/2 tortillas, 1/2 chicken, 1/2 sauce, repeat. Top with generous layer of colby-jack cheese. Heat on high for 2 hours.

Creamed Potatoes au Gratin

3 Medium-sized potatoes (abt. 1 lb.)
onion to taste
salt & pepper
1 c. whipping cream, heated
(may need some regular milk)
1/3 c. fresh grated parmesan cheese
2 tbsp. fine italian bread crumbs
1/4 c. melted butter
Peal and slice potatoes. Cook potatoes and onion in gently boiling water until tender, drain. Arrange potatoes and onions in shallow baking dish. sprinkle with salt & pepper. Drizzle melted butter over potatoes and onion. Then drizzle cream over mixture to barely cover the top. At this point I often need to add a bit of milk to achieve my result. Combine cheese and crumbs and sprinkle over the potatoes. Bake 350 degrees untilmost of the cream os absorbed and the top is golden. App. 30 min.

Honey Butter

1 cup real butter (softened)
3/4 cup honey
1 (7 oz.) jar marshmallow cream
Whip together butter and honey. Then add marshmallow cream, whip thoroughly. Enjoy! Store in fridge.

Huckleberry-Raspberry Dessert Cake



First Layer:
Prepare a White Pudding Cake Recipe as directed. Divide the batter in half. Pour first half into a greased 13x9 cake pan. (Use remaining batter to make cupcakes.) Or if it is a big group make 2 cakes, but be sure to double the rest of the recipe. Cool.
Second Layer:
Whip together until light and fluffy: (8 oz.) cream cheese(8 oz.) cool whip3/4 cup powdered sugarSpread on cooled cake and refrigerate 1-2 hours.
Third Layer:
Prepare 1 pkg. raspberry danish dessert according to pie filling recipe. Add 4c. raspberries and huckleberries. (Can be frozen fruit.) Let cool. Spread on cream layer. Chill for 2 hrs.
