Potato Salad a la Mother

Dressing:
1/2 c. sugar
1 tbsp. cornstarch
1 teas. dry mustard
1/2 teas. salt
3/4 c. water
1/4 c. vinegar
2 eggs slightly beaten
In heavy saucepan combine ingredients, stirring constantly until bubbly. Remove from heat, cover and cool in refrigerator.
Add: 1 c. mayo.
Salad:
6 c. new red potatoes cooked, cooled, peeled, cubed
5 hard cooked eggs, minced
1 teas. onion powder, or 1/4 c. shredded onion
1/4 c. parsley
1 1/2 teas. salt
1/2 teas. pepper
Gently fold dressing with other ingredients.
paprika to garnish
serves 8-10
